Allergen-Friendly Sweet Potato Brownies

Ingredients

 

1 cup cooked and mashed satsuma-imo (Japanese sweet potato)

½ cup natural pumpkin seed or sunflower seed butter

¼ cup pure maple syrup

1/4 cup unsweetened cacao powder

1 tsp pure vanilla extract

Pinch of sea salt for garnish

Instructions

  1. Preheat oven to 350°F (175°C)
  2. Line an 8x8" baking pan with parchment paper
  3. Mix all ingredients until smooth
  4. Spread evenly into the pan
  5. Bake for 20–25 minutes, or until the centre is just set
  6. Cool completely before slicing for the fudgiest texture
